Sourced from a community of more than 350 farmers in the renowned Idido village of Yirgacheffe, Rachia is a beautiful expression of collective dedication. Producers deliver their freshly picked cherries to the Gizat washing station, where the coffee undergoes a precise and rigorous washing process. After initial sorting in density channels, the beans are fermented for 36 to 72 hours, washed, and floated to remove any imperfections. They are then transferred to carefully constructed African raised beds, where they dry slowly for up to 15 days. With constant turning to ensure perfect airflow and steady temperature control, this meticulous attention to detail continues right through to the final sorting and milling, resulting in a remarkably clean and vibrant coffee.
Whole beans or pre-ground?
Coffee deteriorates much faster once it is ground, making whole beans the ideal way to purchase coffee. If you don't have a grinder though, all good!
